  • 2 cups of Spanish paella rice
  • 4 cups of seafood stock
  • 1/2 cup of dry white wine

  • 1 red bell pepper, sliced

  • 2 ripe tomatoes, diced
  • 1 teaspoon of smoked paprika
  • A pinch of saffron threads
  • 1 pound of large shrimp, peeled and deveined
  • 1 pound of mussels, scrubbed and debearded
  • 1 pound of squid, cleaned and cut into rings
  • 1/2 pound of Spanish chorizo, sliced
  • Salt and pepper, to taste
  • 2 tablespoons of olive oil
  • Lemon wedges, for serving


  1. In a large paella pan, heat the olive oil over medium heat. Add the sliced chorizo and cook until browned, about 5 minutes. Remove the chorizo from the pan and set it aside.
  2. Add the diced onion to the pan and sauté for 2-3 minutes until softened. Then, add the garlic and sliced bell peppers and cook for another 5 minutes until the vegetables are tender.
  3. Add the diced tomatoes and cook for another 5 minutes until the tomatoes have softened and released their juices.
  4. Add the smoked paprika and saffron to the pan and stir to combine.
  5. Add the rice to the pan and stir to coat it in the vegetable mixture. Pour in the white wine and seafood stock and stir to combine.
  6. Bring the mixture to a simmer and then reduce the heat to low. Cover the pan with aluminum foil and cook for about 15 minutes.
  7. After 15 minutes, add the cooked chorizo, shrimp, mussels, and squid to the pan. Cover the pan again and cook for another 10-15 minutes until the rice is tender and the seafood is cooked through.
